This slow cooker spiced carrot and lentil soup recipe is one of my go-to soup recipes. It's perfect from Autumn onwards and is lovely and warming, perfect for those colder months. I love slow cooker recipes because once you put all the ingredients in it cooks itself and you come back home to a delicious smelling kitchen and dinner ready made!

I usually make this in the slow cooker as it's so easy but you can make it in a saucepan the conventional way if you want the soup more quickly. It's really easy to make and very healthy. The lentils pack a nice protein punch so it is filling too. If you use non-dairy milk such as coconut milk in place of the milk it is a great slow cooker vegan soup too.

The ingredients list for this soup is really simple and very healthy. You will need...

  • carrots
  • dried red lentils
  • ground cumin
  • chilli flakes
  • vegetable stock
  • milk or coconut milk (optional)

The carrots make the soup nice and sweet so really suitable for little ones - if you are feeding it to a young child though consider using a low salt vegetable stock.

Instructions

This recipe for slow cooker carrot soup couldn't be easier. Simply chop the carrots (no need to peel them) and add to a slow cooker along with the rest of the ingredients except the milk and chilli flakes. Cook on high with the slow cooker cover on for 4 hours or low for 6-8 hours, until the vegetables are soft.

Blend with a hand blender and add a splash of milk for a looser consistency and creamier taste. Garnish with chilli flakes and salt and pepper to taste.

  • 600 g chopped carrots (no need to peel)
  • 140 g split red lentils
  • 1 tsp ground cumin
  • ½ teaspoon chilli flakes
  • 1 litre vegetable stock

Instructions

  1. Quite literally put everything in the slow cooker and cook for a few hours on high until the carrots are soft. You can also put it on low and leave it there all day while you are at work, or overnight. If you want the soup quicker, just pop all the ingredients in a saucepan and simmer with the lid on for 20 minutes or again until the carrots are soft.
  2. Blend with a hand blender.

How to store slow cooker lentil soup

This crock pot soup will keep well in the fridge for up to 4 days. Keep in an airtight container and reheat in the microwave or on the hob.

You can also freeze this soup which is perfect if you are batch cooking. Make a double portion and freeze half for another day. It will keep in the freezer for up to 3 months, simply leave it in the fridge overnight to defrost and reheat the same way.

Variations on lentil carrot soup

You can make so many variations to this soup, try adding chopped onions at the start, or even chopped celery. You can also use homemade vegetable broth or shop bought which will give the soup a different flavour. Try adding garlic or ginger too, especially if you are unwell as they have great health benefits.

This is definitely one of my favourite healthy lunchtime recipes. I serve it with freshly baked baguette or even garlic bread if you want an extra bit of flavour. It goes down really well with the children too because of the natural sweetness in carrots.

Can I use different lentils in this recipe?

Absolutely! While the recipe typically calls for brown or green lentils, you can also use red lentils. Just keep in mind that red lentils tend to cook faster and may become mushier, so adjust the cooking time accordingly.

Can I make this soup on the stovetop instead of using a slow cooker?

Yes, you can! Simply combine all the ingredients in a large pot on the stovetop and bring to a boil. Reduce the heat and simmer until the carrots and lentils are tender, about 30-40 minutes. Then, blend until smooth and season to taste.
