We are going to Hawaii next week and I am super excited. Beach, sand, sun…here I come. The only part that doesn’t sound fun is getting into my swimsuit during the winter. I am used to wearing as many layers as possible to stay warm. Those layers are pretty forgiving on the figure. I hope I don’t frighten the fish:)

To get ready for my swimsuit showdown, I have been eating this Brussels Sprout Pomegranate Citrus Salad. It is fresh, light, and easy to make…and very swimsuit friendly:)

Brussels Sprout Pomegranate Citrus Salad Recipe (2)

Sometimes I get bored with plain old greens for the base of my salads. For this salad, I used brussels sprouts as the greens. They add a nice crunch and jazzed things up a bit. I added in avocado, oranges, and pomegranate arils. I drizzled a sweet citrus dressing over the top. The flavors and textures of this salad are extraordinary. I have been eating this salad almost every day. I can’t get enough.

Remember when I said this salad was easy to make? Well, it is. Don’t start whining that you have to seed a pomegranate to make this salad. I love pomegranates, but sometimes seeding them can be a pain…and a real mess. POM Wonderful has come out with a genius product, POM POMS Fresh Arils. These ready to serve pomegranate arils will make your life a lot easier.

Ingredients

  • For the Salad:
  • 1 pound brussels sprouts
  • 1 large avocado peeled, pitted, and chopped
  • 1 large orange peeled and chopped
  • 1 cup POM POMS Fresh Pomegranate Arils
  • For the Citrus Dressing:
  • Juice of 3 large oranges
  • Zest of 1 large orange
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  • 1. Rinse brussels sprouts and remove any damaged or dirty outer leaves. Place on a cutting board and slice off the hard root end. Using a sharp knife, thinly slice the brussels sprouts. When you're done, use your fingers to gently separate the leaves so that the shredded sprouts resemble a very fine slaw. Place in a large bowl and add the avocado, orange, and POM POMS.

  • 2. In a small bowl, whisk together the orange juice, zest, olive oil, and honey. Season with salt and pepper, to taste. Drizzle the citrus dressing over the salad and lightly toss. Serve immediately.

  • Note-you can use agave instead of the honey to make a vegan salad.

FAQs

What does brussel sprout salad do for you? ›

What gives Brussels sprouts a better taste? ›

In the late 1990s scientists identified specific chemicals, called glucosinolates, that made Brussels sprouts taste bitter. Plant breeders started growing old seeds, previously discarded for producing paltry harvests, to identify tastier versions with lower levels of these compounds.

Why do you soak brussel sprouts before cooking? ›

It turns out that giving Brussels sprouts a good soak can help them to cook evenly throughout. Not only will the sprouts have a better texture after being soaked, but you won't have to choose between burning the outside and undercooking the inside.

What organ is brussel sprouts good for? ›

May support heart health

Brussels sprouts are especially rich in a plant compound, called kaempferol. This antioxidant has been studied for its many health-promoting properties, including the benefits it has for heart health.

Is it OK to eat brussel sprouts everyday? ›

With all of these benefits, you may be wondering if it's okay to eat Brussels sprouts every single day. Rifkin's expert opinion is that it's safe to do so, but you also want to make sure you're eating other nutrient-rich foods too.

Can you eat raw Brussels sprouts in a salad? ›

We love Brussels sprouts in so many dishes, whether roasted or fried. But there's some exciting preparations that don't necessarily involve cooking at all. Raw Brussels sprouts can be a delicious addition to so many salads and slaws, and they couldn't be easier to enjoy.

Do you cut Brussels sprouts in half before boiling them? ›

Tips for cooking brussels sprouts

Halve, quarter or shred sprouts to minimise the cooking time. If the sprouts are larger than average and you want them to remain whole, you can of course cook them for longer. They will probably need 7-8 minutes to cook through. Don't cut a cross in the base of your sprouts.

Should you wash Brussels sprouts? ›

Rinse under cold running water to remove any dust or dirt. Use a small knife to remove the sprout tip, and then remove any leaves that have bad spots. Raw: Slice thinly and toss with other shredded vegetables like cabbage, carrots, or beets.

What to eat with Brussels sprouts? ›

When we think about which meats go with Brussels sprouts, bacon usually comes to mind first. Upgrade that to prosciutto, add poultry and fish to the list, and leave room on the menu for steak.

How long should I boil Brussels sprouts? ›

Boiling Brussels sprouts is a quick and easy way to cook them. Simply, bring a pot of salted water to a boil, toss in the sprouts and let them cook for 6 minutes or until tender.

Why is Brussel Sprouts controversial? ›

Why do you put a cross in the bottom of Brussel Sprouts? ›

The only preparation needed is to cut the stalks right back to the level of the leaves so you have little Brussels balls. Some people swear by cutting a cross in the bottom of each sprout, which they believe allows them to cook all through – but it's not necessary, and you'll save time if you don't.

Why put crosses on Brussel Sprouts? ›

In fact, the tradition of cutting a cross in the base of a sprout might have less to do with culinary technique and more to do with superstition. In Medieval times, it was believed that evil spirits and demons lived between the leaves of the vegetable, and they would enter anyone who ate them, making them ill.

Why not to boil Brussel Sprouts? ›

Steaming and boiling use moist heat, and moist heat can make Brussel Sprouts mushy and stinky—not a good combo. Give them the treatment they deserve by roasting them instead.
